This coffee follows a carefully layered washed protocol built on cumulative fermentation. Cherries are harvested over several days, fermented in cherry, then depulped and added to shared water tanks where fermentations build gradually over time. After washing, the parchment is dried slowly in solar parabolic dryers for 15 to 20 days. This extended approach enhances aromatic depth, sweetness, and flavour integration, while keeping the cup exceptionally clear.
