Neon Milk is a coffee from Henry Bonilla in Colombia. This Pink Bourbon undergoes a high-intervention, controlled fermentation with selected yeasts and a hibiscus culture before being washed, creating a playful and floral profile. Think strawberry milkshake, hibiscus, and white sugar. Sweet, dreamy, and a little trippy.
This coffee follows an advanced washed process designed to build layered fruit and floral complexity while preserving clarity. Only fully ripe Pink Bourbon cherries are handpicked, then rested briefly to trigger natural enzymatic reactions in the intact fruit. After careful depulping, the parchment undergoes a controlled fermentation with selected yeasts and a hibiscus culture (flor de Jamaica) in sealed tanks. A short thermal rinse stabilizes the aromatics before the coffee is fully washed. Drying begins on solar beds and finishes under controlled airflow, followed by a resting period to integrate flavours.
