  • The Natural Reposado method is a carefully developed fermentation approach at Corazón de Jesús. Only fully ripe cherries are harvested and meticulously sorted. Instead of moving straight to drying, the cherries go through a reposado stage, where they are rested in sealed tanks under controlled conditions. This short anaerobic phase allows yeast and bacteria to gently begin fermentation inside the intact fruit. After resting, the cherries are dried naturally on raised beds and patios for several weeks, slowly reaching optimal moisture levels. The result combines the fruit-forward intensity of a natural with a cleaner, more structured profile, enhancing sweetness and aromatic complexity without overpowering fermentation character.
